I am the Chef/ Owner of Mas (farmhouse), a small fine dining, farm to table restaurant in New York City's West Village and the recently opened Almanac Restaurant, a Hyper- Seasonal approach to fine dining. I consult for the Belgium restaurant group EXKi. I am involved with the local chapter of SlowFood, shop at all the local farmer's markets for my house and restaurants.
