System Wide Executive Chef at Sodexo


I have been a working chef for over 20 years and am currently System Wide Executive Chef for Adventist Health Care in the Washington DC area. My recent focus has been on plant based cooking and the connections between food, health and the community. I have written on cooking at home using local sustainable ingredients for "Farmer’s Markets Today" and "The Rock River Times" and have authored a book "Farm Fresh Flavors" on the same subject. I am an advocate for the integration and branding of local food into foodservice, and have worked closely with the Central Rivers Farmshed, The Wisconsin Local Food Summit, The Midwest Renewable Energy Association, DC area "FreshFarm" Markets, The Chesapeake Food Leadership Council and The Humane Society of the United States.
