I teach allergen free cooking for all allergies and have a celiac son and diabetic husband. I teach food safety management, basic cheese making and cake decorating, but my favorite is breads and pastries. Give me a good piece of bread and cheese and I'm happy. Having said that, I have a few mad skills when cooking meat, vegetables or anything pasta. I grew up on a dairy farm in Idaho so anything dairy I'm familiar with. I teach for the Utah Pork Producers thought the year on how to cook anything pork. My candy company offers a unique candy called Rainbow Dough that is a safe, allergen free edible playing dough for kids or great fondant replacement for cakes. It has great fruity tastes and natural colors. My philosophy of cooking is if you really understand your techniques and the purpose and uniqueness of your ingredients, you can create your own dish.
