American cuisine has been influenced by Europeans and Native Americans in its early history. Today, there are a number of foods that are commonly identified as American, such as hamburgers, hot dogs, potato chips, macaroni and cheese and meat loaf. "As American as apple pie" has come to mean something that is authentically American. There are also styles of cooking and types of foods that are specific to a region. Southern-style cooking is often called American comfort food and includes dishes such as fried chicken, collard greens, black-eyed peas and corn bread. Tex-Mex, popular in Texas and the Southwest, is a blend of Spanish and Mexican cooking styles and includes items such as chili and burritos and relies heavily on shredded cheese and beans. Mexican food is popular all around the world. From tacos to enchiladas and nachos, Mexican influences in cooking can be found anywhere. Those native to Mexico pride themselves in using natural, from the earth, local ingredients that generations before them grew up using. The ingredients that they could easily access were the main staples in their cuisine.The Mexican people consider food one of the most important parts of their culture. It’s said that to learn one’s culture, you must first learn how they cook. Looking at the cuisine and food culture of Mexico, it is obvious that the people who inhabit it are resourceful people who take nothing for granted. They take what they can easily get and produce delicious, nutritious meals. Never bland and always interesting, Mexican food is a favorite among Americans and the world over. Cajun cuisine is a form of cooking that originated in Louisiana, USA. It is a mix of French, Canadian, African and Native American influences. When Acadia n farmers were made destitute by the British, they learned to adapt local ingredients such as sugar cane, rice, and craw-fish into a whole new cooking culture. A Cajun meal is usually cooked in three different pots. One pot is used for the rice or cornbread, another is used for vegetables and the third is used for the main dish. Onions, celery and bell-peppers are basic ingredients in Cajun cuisine. The seasonings used are mainly cayenne pepper, parsley, bay leaf and scallions. German cuisine reminds us of American food in its emphasis on meat and potatoes, but the focus on sweet and sour flavors is strictly German. Sweet and Savory Popular sweet and sour dishes like sauerbraten (which combines a sour marinade with a sweet sauce) reveal a taste for flavors that hearken back to medieval cooking, when such combinations were popular across Europe. Vinegar's, sugar, and fruits provide popular piquant sauces. Italian cookery is exceptionally varied, nutritious and healthy; traditions have been handed down from one family to the next over the centuries, and are associated mainly with country life in that dishes are directly linked to what the Earth produces over the changing seasons: in other words, wholesome cooking whose goodness depends on all-natural ingredients. Italian cooking is full of marvelous single pasta dishes made with all types of vegetables and pulses. These are also the prime ingredients for many local specialties though countless types of meat dishes abound, as well as fine fish from the plentiful seas around the peninsula, fragrant cheeses and exceptional desserts. But the undisputed star of Italian dining is the famous “first course”, in all its many varieties, including pasta “dry” or in broth, soups, many kinds of noodle soups and minestrone's, risottos and timetables.
