An unexpected culinary journey began 20 years ago, as a waiter in Toronto's Annex district . From there, Chef Freele has filled virtually every position in both front and back of house, giving him a unique, full understanding of the importance of excellence in team effort, service from the back forward, with an appreciation for food costs and full utilization of the kitchen's stock. The majority of Chef Freele's culinary experience was found in Vancouver's finest restaurants, such as CinCin, Wedgwood hotel,AquaRiva and Le Crocodile, providing solid training in Classic French cuisine under such celebrated Chefs as Michele Jacob and Émile Jung . This strong upbringing has given him the knowledge and skills to develop his signature style - a contemporary, bold, colorful twist on classic cuisine, well-utilizing the bounty of fresh, organic, local ingredients available in Vancouver. He has risen through the ranks to hold the position of Chef de Cuisine in one of Vancouver's most established fine dining restaurants, Cafe de Medici, where he was able to bring his bold, modern style to the sumptuous menus of Northern Italy. From masterful grill work, elegant, creative sauces, to delicate sugar and pastry arts, Chef Freele marries unique, creative fresh flavors together with palate warming classics in a way that always creates an excited buzz at his tables.
