I practice Northern Italian for my work and have a passion for the food of New Orleans. It's great when people like what I make but I get the biggest kick when people compliment a dish or an ingredient in one of my dishes that they profess to hate and continue to order it. I love to teach food and see that "ah-ha" moment in amateur and novice cooks faces.
