I have spent the last seventeen years in the United States, in New York, Texas and Washington. Having the ability to travel to various parts of the world has provided me with significant insight into utilizing a myriad of ingredients, in new and exciting ways, important for keeping additions to the menu fresh and intriguing. These opportunities have led to the ability to work with a wealth of local farmers, ranchers, wineries, etc., ensuring that the freshest ingredients are used, while supporting our local community.
