Because I am scientific minded, I believe in Culinary Science just as much as Culinary Arts. I'm a classically French trained chef, specializing in Cajun, coastal and creole cuisines. I was trained under James Beard award winning chef Frank Stitt and his disciples chefs James Huckaby and Edward Reese. Gaining the majority of my experience was gained on the Emerald Coast of Florida, I have a great love of seafood and the pairing of textures and flavors with them.
