Since then Davitt has worked on Private Motor Yachts and Private Estates as well as cooking at "Oceana" Restaurant, Rockefeller Centre NYC. There he polished his cooking techniques and gained a vast wealth of experience cooking at a Michelin level. Davitt specialises in classic French and Mediterranean cuisine, as well as a variety of Asian styles, including Japanese/Sushi, Thai and Vietnamese. He takes pride in providing impeccable standards of cuisine to his clients, utilising his extensive experience, creativity and resourcefulness and works cohesively with everyone around him to ensure ultimate client satisfaction.
