I have lots of experience with preparing and cooking fish, or anything from the sea. I lived and worked in Greece and Italy for a good amount of time. I have traveled the planet tasting cuisines of many cultures. In 1997 we won the James Beard award for best new restaurant United States at Rose Pistola. I love food and I love simplicity, using good olive oils and fresh local and sustainable ingredients is key. Recently I have been cooking Moorish food, i really enjoy the amount of cultures they passed through and how they picked up many things to create and strengthen their food culture.
