After discovering my love for creating unique and tasty dishes, I ventured off on my own and began Andrew Charles Catering Company. This was my first adventure into the catering industry and I could not have loved it more! After some time and much success, I chose to dedicate my time to further develop my talents and expertise as the Chef of Knock Restaurant & Bar in Center City Philadelphia for about four years. For my well developed menu and consistently high quality product I gained much recognition and was recruited for the position of Executive Sous Chef for the Hyatt at the Bellevue in Center City, Philadelphia. My many successes while in that role led me to my promotion to the Grand Hyatt Washington in DC as the Executive Sous Chef. I worked developing my menu planning abilities while refining recipes and techniques along the way. I specialize in healthy Italian and New American cuisines while putting a local spin on all of my dishes but am not limited to that style of cooking. Over my many years in the hotel food service industry I have had the opportunity to create menus and dishes inspired by cuisines from all over the world. I have made meals for many prestigious people such as the Vice President of the United States, well known actors and have even prepared food for scenes in well known movies.
